Babin's Seafood Amberjack with Pontchartrain topping

Ever heard of Amberjack fish? I never have. But it was the most expensive fish on the chalkboard that was about the same price as the tuna steak. I thought I'd try it out. I also had a choice of toppings and a side. I chose the Pontchartrain seafood topping consisting of shrimp, scallops, and crawfish with mushrooms in a wine roux-based sauce and steamed green beans on the side. It was absolutely amazing. I definitely recommend this place to anyone who loves seafood. The amberjack fish was a thick fish that people would mistaken for chicken if they weren't told what it was. But it definitely has a different texture than chicken. The topping just made everything taste even better and more delicious. I really found this dish quite satisfying and would definitely get it again.
